Tips

  • ·Vegetarian option — Butter: olive oil; Heavy cream: coconut cream; Parmesan cheese: nutritional yeast (savoury yeast flakes)
  • ·Keep the heat low throughout to prevent separation.
  • ·Adjust butter, cream, and cheese (or olive oil, coconut cream, and nutritional yeast) to taste — richer or lighter as you like.
  • ·The thick part of coconut cream gives a better potage-like texture.
  • ·Add nutritional yeast gradually and taste as you go — it replaces the savoury flavour of Parmesan.
  • ·Croutons add crunch; toasted baguette slices or fresh herbs also work well.
  • ·Enjoy your single-serving potage!
